Identifikasi kontaminasi Salmonella sp. pada ikan cakalang (Katsuwonus pelamis) di Pasar Ikan Kedonganan

Abstract

Background: Food contamination can be a serious health problem. This contamination can occur in various places, one of which is traditional markets. Raw food, including skipjack tuna (Katsuwonus pelamis), is one of the food ingredients that is at risk of contamination due to improper handling. Several sources say that significant contamination in skipjack tuna can come from Salmonella sp. which can contribute to various disease complications. Evaluation and identification of Salmonella sp contamination. on skipjack tuna at the Kedonganan Fish Market, Bali is an important thing to review further.

Method A cross-sectional approach was carried out to identify Salmonella sp. contamination in skipjack tuna at the Kedonganan Fish Market. Data was taken from samples obtained using the cluster random sampling method, then tested for Triple Sugar Iron Agar (TSIA) and analyzed descriptively.

Results: Of the 20 samples that were collected, 6 samples (30%) of skipjack tuna were identified as being contaminated with Salmonella sp. which was marked by a positive Triple Suger Iron test.

Conclusion: Salmonella sp. contamination was found in skipjack tuna meat sold at the Kedonganan Fish Market with a contamination prevalence of 30%.

 

Latar Belakang :  Kontaminasi makanan dapat menjadi permasalahan yang serius terhadap kesehatan. Kontaminasi tersebut dapat terjadi di berbagai tempat, salah satunya adalah pasar tradisional. Makanan mentah, termasuk daging ikan cakalang (Katsuwonus pelamis), menjadi salah satu bahan makanan yang berisiko mengalami kontaminasi akibat penanganan yang tidak tepat. Beberapa sumber menyebutkan bahwa kontaminasi signifikan pada ikan cakalang dapat berasal dari Salmonella sp. yang dapat berkontribusi terhadap berbagai komplikasi penyakit. Evaluasi dan identifikasi dari kontaminasi Salmonella sp. pada ikan cakalang di Pasar Ikan Kedonganan, Bali merupakan hal penting untuk ditinjau lebih lanjut.  

Metode : Pendekatan potong lintang dilakukan untuk mengidentifikasi kontaminasi Salmonella sp pada ikan cakalang di Pasar Ikan Kedonganan. Data diambil dari sampel yang diperoleh dengan metode cluster random sampling kemudian dilakukan pengujian Triple Sugar Iron Agar (TSIA) dan dianalisis secara deskriptif.

Hasil : Dari 20 sampel yang telah dikumpulkan, ditemukan teridentifikasi sebanyak 6 sampel (30%) ikan cakalang yang terkontaminasi dengan Salmonella sp yang ditandai dengan uji Triple Suger Iron positif.

Kesimpulan : Ditemukan kontaminasi Salmonella sp. pada daging ikan cakalang yang dijual di Pasar Ikan Kedonganan dengan prevalensi cemaran sebesar 30%.
